グルメにおいて変態は褒め言葉でございます。
京都にてかき氷の変態を発見したのでご紹介させていただきます。変態とは、京都にあるかき氷専門店『京都宇治金時や』のご主人のこと。実は彼、東京の十条にある老舗の和菓子店「だるまや餅菓子店」の若旦那。その当時からこだわりのかき氷を提供していたが、京都でさらに拍車がかかった模様。それはメニューを見れば明らかです。
最高級のメニューが「別格ミルク宇治金時」が3300円に設定されております。だが、これは序の口で、裏メニューには5000円も1万円もあるのだとか。笑 ご主人のオススメもあって7500円のかき氷を注文させていただきました。ミトミえもんもお茶の勉強中ですが、最近では旨味の強い高級な品種も出てきております。八女のお茶なんかもその代表例ですが、きっと同じベクトルが値段に反映されているのでしょう。
ふわふわなかき氷のテクスチャーもさすがだが、お茶の旨味成分であるテアニンが重要なポイントに。さらに、旨味の強いものを追いお茶して、味変的な動きも。こんなかき氷はどこでも食べたことはありません。これこそ変態のなす技といっていいでしょう。現在、食べログのかき氷部門の日本一。なるほど納得です。
