ラーメン屋の酒粕ラーメン
2023年1月2日。まだ閉まっている店が多いです。
大手筋アーケード街を歩くと、門扇の立て看板がありました。
立て看板の無い日は、休業日です。
エディオンの向かいのT字路を、南に下ルと伏水酒蔵小路の入口があります。
門扇は、伏水酒蔵小路という屋台村の中に、あります。
市バス西大手筋バス停からですと、納屋町アーケード街側の入口の方が、近いです。
酒粕ラーメンも玄屋が閉店しましたが、門扇は奮闘してます。
疫病が蔓延してから、ご無沙汰でして久々の来店。
まあ、100％酒粕ラーメンを注文しているので、酒粕ラーメンを玉乃光で、オーダーしました。

基本、鶏白湯スープで、酒粕ブレンドのようです。
酒粕の香りと甘味の引き立つスープです。
ただ、ラーメンのスープの範疇で、粕汁とは異なります。
麺は、セミストレート細麺で、ピンそば程ではありません。
柔らかそうな口当たりですが、拉麺としてのコシを備えています。
具材は、葱、白菜、人参・大根細切り、糸唐辛子等で、糸唐辛子が良いアクセントです。
量は、やや少な目なので、替玉が欲しくなります。
平日お昼の替玉無料が、ねらい目です。
今日は、軽めに戴きました。

各店舗が、お得なランチメニューをPRしてます。
酒粕らーめんの門扇さんが、酒粕冷麺を提供しています。
暑くて食欲も今一つでしたので、伏水酒蔵小路を覘いて見ました。

伏水酒蔵小路屋台村を、見て廻りましたが、やはり、酒粕らーめん 門扇さんにします。
酒粕冷麺を、オーダーしました。

温かい酒粕らーめんは、酒蔵を選択出来ましたが、冷麺は、指定について特に触れてません。
5分程度で、配膳されました。
冷たい酒粕スープは、天一こってりに近いトロミがあります。
酒粕の香りは、冷たい分、強くは薫りません。
鶏白湯ベースと思われますが、クリーミーで、酒粕の香味が支配していて、サッパリしてます。
重くなく、暑い時期に食欲が増します。
麺は、セミストレート細麺で、口当り柔らかですが、しっかりとコシがあります。
また、スープが良く絡み、旨さが広がります。
具材は、葱、キャベツ、人参・大根細切り、糸唐辛子、焼鶏の細切りです。
焼豚では無く、鶏肉です。
具材も、あっさりしていて、冷麺に合います。
替玉が欲しくなり、1玉か半玉か、悩みましたが、半玉を、オーダーしました。
平日ランチタイムは、替玉1回のみ、半玉が無料です。

冷麺としては、完成度が高いです。
