For dinner tonight, I went to "Tsuki no Usagi" in Matsusaka City. It's Ramen shop with a cafe-like exterior, and all the menu items are tonkotsu-based. I visited on a Saturday after 6pm. The shop has both counters and tables, and is suitable for a wide range of customers. The interior is bright and clean, with a white base. [Japanese-style tonkotsu seaweed] The base tonkotsu soup is diluted with Japanese-style dashi with a fragrant bonito flavor, and topped with seaweed and Ise-Shima-produced ishisan. Not only is the Japanese-style dashi delicious, but the aroma of the ishisan is better than I expected, and you can enjoy a Japanese-style atmosphere that is different from ordinary Hakata tonkotsu ramen. However, the base tonkotsu soup lacks punch. There is no odor or marrow at all, and I don't know why I'm eating tonkotsu Ramen. It's fine if you like a creamy taste, but when it's so refreshingly put together, there's no point in it being tonkotsu, so in that sense, it's good that it was Japanese-style. The Japanese-style dashi is delicious, which is a relief. The noodles are ordinary Hakata noodles. I ordered the hardest of the six levels, Harigane. It wasn't that hard. The toppings were seaweed, sardines, wood ear mushrooms, green onions, sesame seeds, and char siu. The char siu was two large rolls of pork belly, which was nice. Judging from the atmosphere and taste concept of the restaurant, it seems to be Ramen shop for women. Thank you for the meal.
