松阪で数十年続いた伝説のイタリアンサルーテから味をそのまま引き継いだチェッポ。ここのズッパパヴェーゼは世界一のスープ料理だと思います。パンと卵とたっぷりのチーズのスープで、子供の頃はじめて食べた時からチーズとパンの酸味のある複雑な旨味にトリコになりました。私の中でスペインバルセロナのセッテポルタスのアンコウのスープを超えて世界一です！ これを食べるのも三重に行く理由の一つだったりします。シェフが味をそのまま継承してくださり本当に感謝しております。
