この「花水木」と「オリーブ」に「長島」という、ランクに差をつけた三つのホテル・旅館があります。
もちろん花水木が、最高ランクの旅館です。
食事の部屋出しがあるのも、この花水木だけです。（他のホテルは、レストランでのバイキングの食事です。）
玄関のお出迎えから翌日のチェックアウトとお見送りまで、徹底した教育の様子が窺える接客がなされます。

ただ、一般的にいう仲居さん（このホテルでは「ルーム係」と呼んでます）の人材が、いかんせん若い人たちばかり。
高校を卒業した娘さんたち全員を寮に住まわせ、業務に就かせてます。
（平均的な勤続年数は、３～４年ほどのようです。）
ルーティーンの動きだけに終始する場面も多く見られ、老舗旅館における老練な仲居さんの給仕を思い描いていると、期待外れに終わる可能性もあります。
