Cow tongue requires aging. The quality of carefully selected ingredients and careful preparation by skilled craftsmen are the keys to bringing out the maximum flavor. Jin's Cow tongue uses only beef tongue from South Australia that has been bred specifically to suit the Japanese palate. The fresh, thick Cow tongue is of the highest quality. At Jin, we only use high-quality ingredients that our craftsmen have personally inspected and can confidently say is truly delicious.

We want our customers to enjoy only carefully selected Cow tongue, so at Jin we only use the particularly tender parts of Cow tongue. Normally, you can get 3 to 4 servings from one Cow tongue, but Jin offers a precious part that can only be used for 1 to 1.5 servings from one beef tongue. Cow tongue is firmer towards the tip of the tongue and softer towards the base of the tongue. [Tangen] is especially tender, and compared to other meats, it is low in fat and high in protein, and has less than half the calories. Don't miss this opportunity to enjoy the special taste and softness that has been carefully selected.

Cow tongue is not the same thing. Since each piece has a different texture and fat coating, it is important that a skilled craftsman “ascertains” the texture. At our restaurant, our craftsman, Hitoshi Suzuki, chooses the cutting method that best suits each Cow tongue and cuts it into thick pieces. The reason why it is soft and crisp even though it is thick is because each piece is carefully cut. By doing this, the texture and chewiness further enhances the flavor, leading to the unique deliciousness of Jin's Cow tongue.
