I went to Seijin-an, an authentic handmade soba restaurant in Iwadeyama, Osaki City, Miyagi Prefecture. I ordered shrimp tempura soba. The soba is made by blending three types of buckwheat flour carefully selected by the artisan's eyes, resulting in a soba that is flavorful, sweet, and chewy.
