「庄内」というお店。もともと石巻とか仙台とかで長らく営業している老舗。
新天地をもとめて古川という街に出店。メガネ屋さんがあった場所を借り受け改装して開業。厨房設備や給排水の設備のないところを一から投資して作ってる。
もともととんかつという料理にあまり縁のなかった地方にあって、それでもとんかつ店の競合は最近、激しい。だから差別化を一生懸命しようということなんでしょう。黒豚のカツを前面押しでたのむとたしかにおいしくはある。プロの手わざで温度管理と時間管理をしないと痩せてしまう黒豚。こりゃ大変だ…、とドキドキしちゃう。
洋食店からスタートした店。だから今でも洋食商品がいくつか揃う。
エビフライって、かつては洋食レストランの花形料理のひとつだった。その名残的、サクサク花が開いたように揚がったエビはあがり軽やか。悪くない。
ハンバーグステーキも売り物のようで、たのむと大きな四角い鉄板。ほどよく焼けててバチバチすることはないけれど、ずっと熱々。デミグラスソースの塩梅と言い合いびき肉を使ったふっくらしたパテという昭和を濃厚に感じさせる。
それ以上に昭和的なのがとんかつスパゲティー。茹でたパスタを油で炒める。ところどころが焦げて仕上がり、具材は玉ねぎ、ピーマンにハム。そこにタップリミートソース。ロースカツ。喫茶店でこういう料理がよくあったよなぁ…、ってなつかしくなる。そんな店。
