延岡市船倉町にある居酒屋さん、ほの穂さんに行ってきました。延岡出張三日目、お肉を食べたいと思いこちらのお店にお邪魔しました。店主の実家が養豚されているらしく、豚肉料理のお店とのことですが、一品料理も結構あります。私が頂いたのは付き出しの菜の花のおひたし、豚もも肉の炭火焼き、やわらか軟骨煮です。もも肉は炭火でじっくり焼かれており、柔らかく仕上がるようにしてありますが、肉質自体は脂身は少なくお肉本来の旨味を十分に堪能できます。おひたしも菜の花の苦みはほとんどなく美味です。軟骨は文字通りトロットロに柔らかく煮込まれており歯茎で噛み切れそうです。味付けもいい感じでした。今回の出張では地鶏や刺し身など素材自体の旨さを堪能する機会が多い気がします。明日以降はちゃんと調理された品を探そうと思います。
