『Ristorante Narvalo』さん
全てが極上とは始まりから終わりまでのありとあらゆる経過のこと。
「和食は食べ疲れせずストレスが掛からない。」
と聞いて確かにと思いました。
日本の四季を大切にして色々な視点からアプローチした繊細な皿は新鮮で芸術性も高い。
中身に緻密な計算が詰められている事に食べ終えた後気が付きました。
お話ししていなければ気付かなかったかもしれない些細な事ですが、ここまで私達に対して考えられているお店が東京でも中々出会えないのではないでしょうか？
お皿に合わせて貰えるノンアルコールのティーペアリングを頼みました。
日本茶と台湾茶をベースにした見た目も美しく料理に寄り添いとても良い相性。
シンプルにこれは美味しい。
言葉は入りませんね。
とても良い気分ですね。
自分自身今までで一番満足し、感動させられたお店です。

去年訪れてからまた行きたいと思っていた『Ristorante Narvalo』さん。
約1年ぶりでしたがこの一年で更に進化していました。
今回はプライベートなので忘れないようにまめにメモを取りながら五感で楽しみます。
ワインはソムリエさんセレクトのこちらの1杯で食事と楽しむことに。
※お昼なので控えめに。
・マルケ州 イルポレンツァ ブリアネッロ
ソーヴィニヨン・ブランの爽やかな果実味とハーブの風味がとても心地良い。
料理の方は
・石川県の甘海老と天使海老をシャインマスカットとハーブ、発酵塩レモンソース
シャインマスカットの爽やかさとハーブの複雑な風味が合わさり旨味のある塩レモンソースが絡みながら甘海老の甘さとコクで包み込まれる。
大ぶりの甘海老がとてもいきいきしていてとても美味しい。
天使海老は更に旨味が強くこれはワインと抜群に良い。
・蒸気蒸しされた若い無花果をカラメリゼ 黒胡麻とゴルゴンゾーラ 白醤油をアクセントに
満月の様な器がとても素敵で開いた瞬間に驚きが。
無花果をこう言う風に食べるのは初めてですが全てが調和してあっという間に食べてしまった。
・フォアグラ イタリア栗 塩キャラメル
苔玉をイメージして作った前菜だそうです。
贅沢なトリュフチョコレートを前菜にしたと言う感じでしょうかこれはたまらん。
・蝦夷鹿のボローニャ風
ロディジャーノと言うチーズを合わせたそうで野菜の深い味わいにホロホロした鹿、絡みのいいブッコリと言うパスタがこれまた美味しい。
・南国スイート豚 森の畑ブルーベリー
紅葉を演出した盛り付けたそうでとても綺麗。
ブルーベリーの果実味とバルサミコの調和が素晴らしく2時間じっくり火入れした豚肉は甘味と旨味が強く、食感がもっちりしてこんな美味しい豚肉は初めてです。
ソースと野菜たちの旨味も合わさりとても美味しい。
・秋のティラミス
極みヨーグルトをベースとしたクリームにパープルスイートの焼き菓子、シャインマスカットとこれまたお見事。
6割残してと言われましたので食べ進めたらそこから2段回目、1年砂糖漬けした洋梨とエスプレッソのソース。
まさかのティラミスになったぁ〜〜。
このヨーグルトの濃厚でもっちりとした食感と味わいには驚きましたがそこからティラミスとは。
最後のエスプレッソも食後に合わせた独自ブレンドらしくとことんこだわり抜いている。
この値段で良いのかと思うくらいの感動と贅沢な時間を過ごせました。

お客様に1周年記念のプレゼントが所々に飾ってありとても嬉しそうに話されている様子が愛されているのだなぁと感じました。
本当美味しかったご馳走様でした。
絶対また行きます。
