小布施にある、そば百名店。
月曜日のランチは、蕎麦コースのみの受付のため、11時半と13時のうち、13時の部を予約。
12時50分から席の案内がはじまり、テーブル席に通される。
2750円のコースで内容は以下の通り。

■前菜 △
→以下の3品。蕨の胡麻和えは、ねっとりした食感が、くらかけ豆は出汁の味付けが、うわばみ草はしゃきっとした食感と梅の味付けが良かった。

■手挽きそばがき ☓
→蕎麦の風味とねっとりした食感が最高だったが、提供された料理に重大な問題があったため、この評価。
■手打ち生打ち蕎麦 ◎
→挽きたての蕎麦粉と冷水のみで作られており、その日の朝に2台の電動石臼で、製粉されている。瑞々しく風味の強い蕎麦で、ボリュームも有る。何もつけずに、そのまま食べてみても美味しいが、塩を箸に少しだけつけてみると、最も美味しくいただける。そばつゆは、かなり濃い口なのであまりオススメはしない。山葵は香りが良かった。ネギが無いのが特徴的。
■根曲り竹 ◎
→信州味噌とともに、4本提供される。皮を剥き、食べてみると甘く柔らかく、食感も良い。素材が良いため、塩で食べるのがオススメ。
■蕎麦湯 ◎
→かなり濃い蕎麦湯。ドロドロになった最後の一滴まで飲み干してしまうほど美味しい。蕎麦がきを食べているような感覚。料理の一品として成立してしまうクオリティー。
■石窯焼き そばピッツァ◎
→薪窯で、300度で焼き上げられる、蕎麦粉を使った名物ピッツァ。いくつか種類があり、季節のピッツァを選択。提供されたピッツァには、根曲がり竹が入っており、しゃきっとした食感と、生地の香ばしさが感じられる。アンチョビとバジルとトマトのバランスも最高。初めて食べる食感に舌鼓を打つ。
