馬肉のオリジナル料理を中心に、岩魚や山賊焼きなどの地元郷土料理も楽しめる居酒屋ですが、ただ一人旅の私は気になっていた馬刺しとおたぐり鍋を注文。
馬刺し3種盛りは赤身と霜降りとたてがみです。
赤身馬刺しは、プリプリの食感で、甘みと旨味が濃厚です。醤油を少々つけると、その味わいはまるでマグロのよう。
トロの霜降りは舌の上に載せるだけで、とろ~りと溶けてしまうような柔らかさ。脂がしっかりとのっているのにあっさり。多めの葱を合わせることでその風味が一層引き立ちます。
首部分の皮下脂肪のたてがみは見た目は真っ白な脂身ですが、食感は全く異なり、コリコリとした食感で、噛むたびに甘味が広がります。馬の脂は牛肉の脂のようなしつこさはなく、脂っぽさをほとんど感じずに後口がサラッとしているのでクセなく食べやすいです。ほのかな甘みと豊かな香り立ちのある信州味噌や生姜を添えて食べると、たてがみの旨味がより際立ちます。
おたぐり鍋は馬モツときのこを使った味噌仕立ての鍋。馬モツは事前に煮込み済みでの提供で、柔らかいです。しっかり下処理されているので臭みもないです。あっさり甘めの味噌出汁に、大きいなめこや椎茸と馬モツがたっぷりで、マイルドな旨味がじんわりと溶け込んでいく、さらにコクと深みが増えてきました。もう少し癖があっても良いかもしれませんが、地元の味わいを堪能するには十分です。
