Paitan Paitan Lately, I've been feeling noisy, so I looked up what paitan is, and it turns out it's a cloudy soup. The words on the other side are chintan (clean water) and ja-you shantan (high water)! ! ! I looked it up.Chintang refers to a clear soup.Generally, the base is made by adding minced chicken bones and simmering it for a long time to remove the bitterness.Shantang is! ! ! In short, it is a high-quality Chintan, and versions using Kinka ham or whole chicken are classified as Maotan, Seiyu, and Joyu.Tonkotsu Ramen is also Paitan, Paitan, Tori Paitan. The reason why I say "chicken" is because paitan is basically made with pork and chicken. In Chinese style, paitan is a spirit soup made by cooking over high heat and emulsifying it.I have no connection to this restaurant, and no matter how many times I came there, the timing was bad and I was disappointed.It is located about 100 meters away and is shared with Izakaya (Japanese-style bar).
