長野に用があったので、この地域で割と点数高めのこちらに初訪問。
十割どうづき天ざるを注文。¥3040。
どうづきそば。初めて聞いた。
どうづきとは、そば粉を製粉せず、そばの実を甘皮付きのまま低温水に2日間つけて、杵搗機で直捏ねしてそばの生地にします。←Google調べ。
なのですするとザラっとした舌触り。
想像では蕎麦の香りも甘味も感じられるんだろうなと期待値を上げてしまったのが失敗。
香り甘みは感じなかった。
天麩羅は美味しかった。
蕎麦って難しいなぁ〜、、、
