13時前に訪問。テーブルが5卓、座敷に3卓あります。外待ちが3組でした。店内は感染症対策の名残なのか席間が広くと取ってあり、落ち着いた雰囲気も相まってゆったりとした時間がながれます。
20分ほど待って入店。メニュー数はそんなに多くはありません。出汁かつけ汁か、普通のつけ汁か高遠の辛み大根と味噌のスタイルか。その他天ぷらと馬刺しといった感じ。繁忙期なのでメニューを絞っているのかもしれません。
高遠スタイルの中盛りをオーダーしました。1200円。
10分ほど待って到着。高野豆腐と菜の花のお浸しも付いてきます。
このお店はしゃもじに塗ったものを炙るスタイルではなく、丸めて団子状で味噌を提供。気合を入れて混ぜないとムラが出てしまいます。蕎麦の色はやや黒目。ただ慣れないと辛味大根が強いので蕎麦の味がよくわからなくなってしまう恐れが。のど越しも歯ざわりも素晴らしかったです。普通の出汁も良いですがこの地に訪れたなら召し上がって欲しいのは高遠スタイル。
退店時はさらに行列がのびて10名以上になっていました。
