最近オープンするお店は、レトロ感の演出や何とか横丁とかは極端な例にしても、多くのお店が雰囲気の作りこみに熱心である。しかしそれらは作れらた偽物の雰囲気なわけです。そんな偽物の雰囲気が蔓延る世の中だからこそ、自然と滲み出る本物の雰囲気にこそ価値がある。
飯田駅前の「〆清」は、そんな本物のお店です。
コの字型のカウンター席で構成される店内の雰囲気だけで、行く価値があるお店。
料理はおでん、おたぐり、油揚げがおいしかった。
飯田の郷土料理、おたぐり。飯田に来たら外せませんね。馬のホルモン煮込みのことで、飯田の居酒屋では広く提供されています。このお店で、私のようないかにも都市部から来ましたという雰囲気丸出しの一見客がおたぐりを注文すると「好き嫌い分かれる味だから、まずは半分だけ食べてみて」とのマスターのやり方。
このマスター、二代目の若大将といった風情。（実際、最近まで先代がカウンターに立っていた様子）
媚びず、ぶっきりらぼうだが、でも気遣いを忘れない。シブい。この接客スタイルは学んでできるものじゃない。天性のものですね。殺伐とフレンドリーを行ったり来たりする、この絶妙な距離感、感心する。真似しようと思ってできるものじゃないです。
そして客層。みんな常連っぽい。たとえ常連じゃないにしても、そこに座っていれば常連に見えてしまうお店の雰囲気もすごい。私が訪問した時の隣の客は実際の常連だったようで、お酒をおごってもらったり話を聞かせてもらった。話して分かったが、かなりの博識で、地域の有力者っぽい方だったな。客も只者じゃあなかった。
地方に行くと、たまにすごいお店に出くわす。そんなお店の一つだった
