2023.2.18 (Sat) Dishes we received: Kudzu Kiri ¥990 (tax included) The Kudzu Kiri is made after receiving your order and has a clear texture like water and a firm texture. Mixed with brown sugar syrup. Kudzu belongs to the leguminous family and is a climbing plant that grows anywhere in the mountains and fields. The leaves are used as feed for livestock, the stems are used to make kudzu cloth and crafts, and the roots are used to make kudzu powder. In order to obtain high-quality starch, during the bitterly cold winter, we go deep into the mountains where people can barely walk and dig up the roots that grow deep underground. The root is crushed into fibers, mixed with water, the starch contained in the roots is squeezed out, and the product is refined using a manufacturing method unique to the Yoshino region called Yoshino Sarasashi, and is called Yoshino Honkuzu. Yoshino Honkuzu, grown in the cold winter air and water, has a beautiful white color. It is said that approximately 100g of arrowroot powder is produced as a final product from 1kg of arrowroot. Nowadays, there are fewer people digging roots and fewer mountains where high-quality kudzu roots can be dug. As a result, arrowroot powder, which was the mainstream starch in the Edo period, has now become expensive. Tengyokudo would like to continue to protect this kudzu and the method of manufacturing it.
