何とあの東京板橋の有名なSOUPMENの創設者の方が奈良市に牡蠣をコンセプトにした麺屋さんを開きました
早速土曜日のオープン時に訪問しました
オープン時に自分を入れて３名町でした
店内は牡蠣小屋のままなのでテーブル席にコンロが配置されたままの使用です
注文して待つ事10分程で配膳されました
スープはクリアに透き通る美しい清湯スープ
牡蠣の旨味、香り、余韻の全てが凝縮された素晴らしいスープですね
カテゴリーに分けるとするなら「塩ラーメン」になるのでしょうか。塩だから味が薄いとかイメージしてる人がいればそれは間違いです
一口スープを飲めばこのインパクトがわかるはずです
麺は見た目が完全に「和蕎麦」ですが蕎麦よりも中華に近い香りで、弾力は冷麺に近いグインと伸びる麺で不思議な食感です
トッピングに煮卵と牡蠣漬を注文したのですが、煮卵は少し固めに茹でられています。このスープには卵が流れ出さないこれぐらいの方が良いので計算しての硬さかな？
牡蠣漬は元からトッピングで乗っている物と同じなので2個乗ってきました。牡蠣好きにはたまらん一品ですね
後半は葡萄山椒やバジルペーストで味変を楽しんでフィニッシュ
