本格的な北京宮廷料理をランチタイムはリーズナブルに戴けます。
海鮮ラーメン 1500円 (税・サービス料込)※10年05月時
平日限定のランチメニューの中の一品。他にフカヒレラーメン等もあります。
スープは、高級中華ならではの牛、豚、鶏、中華ハム、乾し鮑、乾し貝柱等から採ったものだと思いますが、何かの素材が目立つことは無く複雑な旨味があって繊細で味わい深いもの。塩の塩梅も良くて片栗粉で軽くトロミをつけてある上湯です。
麺はあまり見たことの無い透明感のある中細ストレート。色合いからすると低かん水の熟成麺系だと思うのですが細いのにコシもあって良い出来。トロミのあるスープが適度に絡みます。
具は、蟹爪1本、小海老、イカ、袋茸、筍、白菜、人参と刻み白葱。軽く餡かけ風になっていてボリュームも充分。小海老やイカは、下ごしらえがされていて火通しも良くレアな食感があって柔らか。袋茸もスープを吸ってプニョプニョと面白い食感です。
1500円は高いと最初思いましたが、食べてみると納得の味とボリューム。ラーメン屋や大衆中華店では味わえないタイプのスープはかなり満足のいくものでした。
