新潟名物の『へぎそば』専門店です。毎年どこよりも早く新そばをご提供しています。
自分なりのそばを追い求めて、もっと蕎麦の味を引きだしたい、もっとそばの香りを感じてほしいという観点からそば作りに勤しんでいます。２０１７年からは量はまだ少ないですが自家栽培も始めました。２０１８年度はオリジナル麺選手権におきまして全国準優勝という栄誉も賜りました。ますます『蕎麦道』を極めるべく邁進していきます。
