背脂煮干ラーメンは燕三条特有の背脂と平打ち麺。冷めても温度維持できるような地域の工夫だそう。
脂が多くてくどく感じるかと思ったが、玉ねぎがあっさり感を手助けしてくれるためさらっと食べられます。
最近味が変わりましたね。
