長岡のソウルフードとも言われている生姜醬油ラーメンといえば、宮内駅周辺に４店舗を展開する青島食堂が元祖的な存在です。
生姜醬油ラーメンが評判のほかの店も青島食堂で働いていて独立した、いわば青島系と呼べるお店が多いのですが、こちらは青島系ではない「独立系」という感じでしょうか。
がつんと生姜をきかせたラーメンを作りたいという意気込みとおり、かなり生姜が効いていて舌がひりひりするような感じがします。そのひりひりがとても良く、体がぽかぽかしてきます。チャーシューも青島食堂よりは厚めに切ったもので食べ応えあり。
すっきりして醬油の旨みが引き出されるような味わい。こうしてもとは「青島ラーメン」だったものが、長岡生姜醬油ラーメンとして根付き、広がっていくんですね。
