Hello. In Kyushu, where I live, pork innards are not very popular, but rather it may be better to say that we don't have the custom of eating them. We do eat them, but we don't eat as many varieties as in the Kanto region. We don't eat horse innards like in the Chikugo region or Kumamoto. Basically, innards are beef. Here in Nakatsu, a barren area for pork innards, there is a restaurant called "Kuton" that serves Kanto-style Pork Dishes. I was amazed by the Kinun Pork Tataki I had previously, but I was especially surprised by the Kinun Pork Yukhoe. Since I was a child, I was told to "eat pork well cooked," so I wasn't excited about eating it raw, but this was before the war, and the owner told me, "It's okay to eat pork raw these days." When I ate it, the texture and flavor were different from beef, and it changed my opinion of pork. I prided myself on having a lot of knowledge about food, but I was defeated by the Yukhoe. There are also delicious drinks such as shochu and wine, so I recommend that everyone try it once. Thank you for the meal.
