クラシックミニのレースが岡山国際サーキットで行われるので、前入りで津山に泊まることにした。
昼過ぎに津山に到着。先ずは昼飯と云うことで『石川屋』へ直行する。
店のうらにクルマを止めて、店に入ると先客は2組。鉄板の前の正面の特等席に案内される。大将のワンオペである。
おしぼりを出してくれて注文を聞いてくれる。
「ホルモンうどん」「牛レバー」「そずり」をお願いする。
牛レバーの塊りから切り分けて、鉄板の上に投入する。ほんの4～5秒転がして出来上がり。
「ちゅんちゅん焼きです」と云って出される。
久しぶりに味わう生レバーの甘さ。当然のことレバーの中は冷たいまま。ごま油のソースとよくあう。
ノンアルコールビールを頂いて限りなく生レバーに近いちゅんちゅん焼きを楽しむ。
「そずり」があっという間に鉄板の上で焼かれていく。「そずり」とは骨に付いている肉をそぎ取ったもので、マグロでいうところの剝き身みたいなものらしい。
身と脂が半々ぐらいのバラ肉のようで、決して柔らかくは無いが、脂が甘くて肉の味が濃い。凄く美味い！いくらでも食えそうだ。ノンアルビールが進む。
手際よくホルモンうどんが焼かれていく。鉄板の前の席は調理を観ながら食べれるので楽しい。ホルモンうどんは、プリプリのてっちゃんが際立つ。「美味い、美味い！」
ホルモンうどんとしての全体的な味付けもバランス良くて感心する。ホルモンがなくても美味い焼うどんである。
津山に着いて早々にホルモンの美味しさと云うか肉の良さに驚いた。
