久茂地周辺の所謂那覇の中心街にある琉球懐石料理店。
最後の琉球国王尚泰王の四男で美食家だった尚順男爵の食していた琉球料理を研究しレシピに保存している由緒正しきお店。
調度品も厳かで素敵な店内は居るだけで博物館にいるようだ。
コース料金は9000円、12000円、15000円とあり今回は12000円のコースを頂く。
食材を考慮すると高く感じるが相当手間のかかったお料理なので納得。
例えば中盤のなかみの吸い物は豚の小腸を茹で、洗を何度も繰り返し臭みのない透き通った状態にするまめ凄まじい手間がかかるそうだ。
・苦菜の白和え
白和えねっとりしておりクリーミー。
・もずく酢
もずく酢酸味抑えめ出汁感がある。
いきなり一般的な沖縄料理との違いを感じる。
・ぽうぽう、花いか、かまぼこ☆☆
人参のかまぼこは歯ごたえが強く魚の風味が強い。
ぽうぽうは豚のペーストと皮の相性が良い。
・なかみの吸い物
豚の小腸。
まるで麺の様な食感とクリアなお出汁。
・芋くずアンダギー☆☆
あっさりした塩味で紅芋の風味が強い。
表面は軽くてカリカリ、中はモチモチで食感が秀逸。
・田芋唐揚げ、豚の黒胡麻蒸し☆☆
豚がジューシーで黒胡麻の風味が豊か。
・ラフテーとソーキの煮付け
・ミミガーの和え物
・昆布と豚肉とかまぼこの炒め物
・出汁かけ豚の炊き込みご飯
派手なお料理は無いものの一品一品凄く美味しく今まで食べたことが無い味わい。
まだまだ沖縄の食も奥が深い。
