A few decades ago, when nobuta lived in Okinawa City, there was a restaurant in Naha Jas that served delicious lunch set meals that he would stop by whenever he had a chance to go shopping. After that store closed, a Japanese soba restaurant, which was rare in Okinawa, opened. What's more, it was a full-fledged soba restaurant with a soba kaiseki menu. The shop has been renamed ``Soba Dining Akasaka'', but it is still a popular Japanese soba restaurant that promotes the Japanese soba culture, which is rare in Okinawa.It is located in the back street of Naha Jas. This soba restaurant has become popular as there are two parking lots, the first and second parking lots, both of which are full. I have visited nobuta only once when it had its old name, but I have not visited since it changed its name. It was empty so I slipped in. When I entered the restaurant, which was unusual even though it was just after 1pm on a Saturday, the restaurant was full of Nobuta couples. After that, there were customers waiting outside one after another...we were lucky. However, the time after 1:00 pm is when the 12:00 pm customers are leaving, so the waiting time for customers waiting outside seems to be short. When nobuta left, only two groups were waiting. Well, it's a beautiful store. Calm atmosphere with jazz music. Regarding the shop's soba noodles, the website and menu list state that ``All of our Japanese soba noodles are homemade noodles.The soba flour is a blend of Otoijifu in Hokkaido, which is said to be of the highest quality, and soba from one of Japan's leading producing regions. We use buckwheat flour that is ground once in a low-speed stone mill, the same way that Kara's grandmother grinds it in a stone mill, and are made with the utmost care at the Akasaka noodle factory, making each buckwheat ball with the highest quality groin flour. These raw soba noodles are made with ``specially made authentic homemade noodles'' that are kneaded by craftsmen and have a rich flavor and chewiness. We use ``Inaniwa udon'' imported from Akita. We order our fish from ports all over the country, and with some exceptions, we use fresh vegetables from Itoman and Nanjo City. We provide delicious, fresh and safe ingredients.
