Today we headed north all at once from the southern part of the main island of Okinawa. After finishing work on Kouri Island, today's accommodation is Buena Vista Nakijin. When you think of Kouri Island, you think of sea urchin bowls, but now the seasons are different, and local sea urchins don't seem to be available much these days due to overfishing. Since I didn't have enough legs, I had dinner at the hotel. There is a 7-Eleven on the first floor of the hotel. This Restaurants is on the other side. Apparently, Okinawa has the highest production of tiger prawns in Japan. Cultured tiger prawns from Okinawa are in season from November to March of the following year. The prawns produce amino acids by eating food, and the prawns from Okinawa, which do not hibernate during the winter, are elastic and have tender flesh. Since it is a restaurant specializing in live prawns that is affiliated with a prawn farm, it seems to specialize in dishes made from the live prawns that are caught every morning, and they serve shrimp sashimi, deep-fried shrimp, and fried shrimp that are still in motion. Unique to Okinawa, it even comes with soki soba. I'm not sure if the tartar sauce contains shrimp shells, but it's pink.
