北新地駅より徒歩5〜7分の場所にある肉割烹 北新地やまがた屋。
カウンター越しに店主がお肉を焼いてくれる肉割烹のお店。2018年〜2022年焼肉west百名店に選出されています。
豪快にトリミングしてタンやハラミの良質な部位だけを提供されているので、お値段設定は高めですが、その分クオリティの高いお肉を堪能できるのが特徴です。
今回いただいたのは、焼コース。砂ずり、セロリ、牛蒡など一風変わった食材を使用したこだわりのキムチに始まり、絶妙な焼き加減で片面だけ焼いた牛タンは、舌の上に焼いてない面を乗せるよう指示があり、お肉の旨みを最大限楽しめるよう店主の思いが伝わってきます。
トロトロに煮込んだ柔らかい牛テールに醤油と黒酢を組み合わせた一皿、牛タンにサッと火入れしたキノコ汁、芯まで絶妙に火入れした厚切り牛タンも最高でした！
芳ばしく片面を焼いた極上ハラミと、甘辛く煮込んだ締めの牛丼も絶品で、タンとハラミを余すことなく楽しめるお店だったので、ぜひ訪問してみてください。
