梅田堂山にある表記の店で会食。新御堂筋側の道から店名通り路地を入ったところに位置する。目立たない場所なんだけど和モダンな店に入ると客だらけ。。特に女性客割合が高い。
お店の特徴は食材のこだわりで特に野菜は全国の生産者からの直送。日本酒の種類は30以上。。
座付は菜の花の白和えとミニぜんざい。。鏡開きということで気の効いたサービス。。スタッフも若い方ばかりで店内は活気に溢れる。
煮込み大根の唐揚げ580円。サクリとした衣の中には柔らかく炊き込まれた大根が登場。咥内で大根の出汁が溢れ出す。添えられたニラソースも秀逸。
新鮮な鰤を胡麻であえた料理。魚の上には山川産本枯れ節を0.01mmに削ったものが載せられる。
鶏の天ぷらに大根おろしと出汁をぶっかけた料理。塩梅もとても良くていくらでも食べ進む。。総じて料理のクオリティが高い。。。お店の人気の理由がうかがえる・・・
ここで名物の食べるオリーブオイルともいわれる「十勝放牧豚」を使用した出汁しゃぶ登場。黄金色のスープの中に 極薄0.01mmの鰹節をたっぷりと注入。
そして、しばらく後にそれをひきあげてから、具材である野菜、豚を投入していきます。
豚は最初はそのままで、次に本わさびをつけていただく。
十勝牧場放牧豚の脂が甘くて食感もシルキーで今まで食べた豚しゃぶで一番美味しいと思った。
野菜の美味しさも秀逸。肉で野菜を包むようにしていただくのがオススメとのこと。
最後は、麺で締め。最初はまず塩でいただく。お酒のアテになる麺と呼ばれているらしい。
試作品のまぜ麺もサービスでお出しいただく。
この店の超ヒットデザートのジャスミンプリン。トロトロの食感が特徴。
まずはそのまま一口食べて、二口めからはウーロン茶葉を使用したカラメルをかけていただく。口いっぱいにジャスミンの芳香が漂う。他にも気になるメニューがいっぱい。。気軽に入れて場所も便利ないいお店です。。
