梅田第一ビルの地下一階。西梅田駅か北新地駅西口から行くと近いです。有名店なので、コロナの影響で席に空きがあると聞いて行ってきました。最近のような寒い季節はロシア料理がぴったりです。たっぷりつかわれたサワークリームが食欲をそそります。あまりに美味しいので１週間連続で毎晩（ランチタイムにも一回）通いました。毎回大満足です。
ロシア料理の基礎は、極めて厳しくなる気候風土に暮らす農村住民のあいだから生まれた農民の料理だそうです。手元にあった魚、家禽、野生の鳥獣の肉（ジビエ）、キノコ、ベリーや蜂蜜を組み合わせたものでした。ライ麦、小麦、大麦、キビ等の穀物は、パン、パンケーキ、粥、クワス、ビールそしてヴォトカの原材料となり、風味豊かなスープやシチューは、旬の、あるいは貯蔵可能な食材、魚、そして肉を中心としたもので、冬が長く厳しいため、様々な野菜のピクルスや果物のジャムなど多くの保存食料が作り出されたそうです。
ロシアの伝統的なオーブンには焜炉が無かったため、調理法はロースト、パン、鍋にふたをしてオーブンで加熱した煮込み料理など、オーブンを使った焼き物が主で、この土着料理は、20世紀に至ってもなお大多数のロシア人にとって主食となっているそうですが、それが、大阪のど真ん中で味わえます。
