平日の18:15にネット予約をして利用しました。
JR「北新地駅」から徒歩約2分、ニュー華ビル3階にある「食べログ とんかつ百名店2022」の実力店です。（2017年から連続受賞中）
2013年4月オープンの店内は落ち着いた設えの総席数9席の小型店舗。
厨房に1名、接客対応に1名のフォーメーションで繁盛店らしい切り盛りをしていました。
今回オーダーしたのは以下の品々。

火入れはミディアムレアで 臭みがなく上品な脂身が口の中でとろけます
上質なパン粉と最高級のラードを使用して「外はカラリ中はジューシー」に
自家製のポルチーニ茸塩で頂くのがデフォルトなれど 箱に入ったSalt Menuの中から世界各地の塩で味変できます
美味しかったのは「あおさ海苔塩」と「イタリア シチリア島の岩塩」

客の入りは約8割。
女性比率は約4割。

ちなみに訪問時点の食べログ評価点は3.76です。
ベテラン女性スタッフの明るく礼儀正しい応対とチームワークの良さが加点要素。
大人の街・北新地のコンバットゾーンで厳選ブランド豚のとんかつで勝負する百名店でした。
次回はランチの「東京エックスロースカツ定食 5180円」にトライしたいと思います。
