3ヶ月ほど前に予約。カウンターのみ8席で一斉スタートです。
当日のメニューは以下のような感じ。
エビ、カリフラワーのジュレ掛け
もみじ鯛のサラダ仕立て
白子のソテートリュフ添え
イカソテー、穴子フライ、ショートパスタ ガラムマサラで風味付け
鰆グリル
ポークソテー
タルトタタン
素材、メイン食材はもちろんのこと付け合せのような目立たぬ食材まで全てにシェフの心が行き渡ったものでした。調理の技術は言うまでもなく、素材、提供するタイミング 全てが素晴らしい以外の言葉が見つかりません。盛り付けはまるで絵のようです。次回 行けるとしたら春頃のなのですが、声が掛かるかどうか・・・
