中国・西安で一般的に食べられている郷土料理、ネギや唐辛子、山椒をのせタレを絡ませて食べる、きしめんのような平たい幅広の麺「ビャンビャン麺」

まずは、底に溜まった黒酢ベースのタレをしっかり絡ませて。
蘭州と異なり"かん水"を使わない麺は、ややうどんに近い素朴な舌触り。
口幅いっぱいにすすり、ビロビロと踊る食感も楽しい。
ジャー醤、トマトと玉子、チャーシューなど全てを混ぜながら味の変化を楽しめます。
