大阪市中央区の『旬菜 桜花』へ。
最寄りの地下鉄四つ橋線 肥後橋駅6番出口から東に200m少々の所にあります。
店内はとてもモダンでお洒落な雰囲気。
メニューを見ると、食材は海の物山の物を問わず、地元のこだわり生産者さんから仕入れているようです(ツムラ本店の鴨、カンキフーズの犬鳴ポーク、原野牧場の梅ビーフ、タナカファームの玉子、箕面ビールと言った具合)。
初かつお,金目鯛,もんごいかのお造りを皮切りに、各地の素材が綺麗に手を繋いだお料理が出てきます。
厚化粧させず、素材がもつポテンシャルを引き出しながらそれぞれをマリアージュさせていくのが私の仕事と言わんばかりのお料理たち。
自分で足を運んで繋がった生産者さんたちの仕事を信用しているのでしょうね。
お料理を引き立てるお酒たちも充実。
大好きな愛知の『長珍 しんぶんし』が置いてあったのには嬉しくなりました。
もちろんスタッフさんに聞けば、お料理に合うお酒を丁寧に教えてくれます。
アルコール分解という重責を担う肝臓を元気付けてくれるじゃこご飯で〆て、ごちそうさまでした(^^)
