京都中華の源流『鳳舞』
その流れを組むお店が大阪へ進出
この日は年末だったこともあり、
ランチは撈麺、椒醤酥鶏(からしみそどり)、焼売の3つだけ
お店のウリである撈麺を単品で注文
麺は中細の縮れ気味のもの
茹でた麺に辛子酢醤油を絡めて、
そこにあんかけをするのが撈麺の最大の特徴
食べると先にツンとした酸味が来て、
次に辛子の風味が追いかけてくる感じ
辛くはないですが気を付けないと咽るｗ
あんかけの具はエビ、鶏肉、木耳
そして白菜とかでなくレタスがたっぷり
レタスは炒めると生とは別の旨さがあります
あんかけ自体はアッサリめの塩味
でも麺に味付けをしてあるのでこれで十分
濃いあんの焼きそばも好きですが、
これはこれで上品で美味しい
もうちょっとレタス以外の具、
特に鶏肉はもう少し量が欲しいかな
