●帆立とスナップエンドウと蕪のサラダ
聖護院蕪のピューレ
スナップエンドウをフリット、ソース、とアレンジして。
レモンピールのゼリー。
トマトはシェフ厳選の伊勢のもの。
皮の食感がしっかりとしています。
●鰤のスモークと玉ねぎのチャツネ 胡麻風味
下には蕗の薹のペースト。筍。
苦味がありますが、
鰤とあわせると甘味が引き立ち、とても良い組み合わせ。
●鮮魚のポワレ トレビスとベーコンのブレゼ 赤ワインソース
お魚はヒラメ。
プリっとした火入れです。
トレビスは苦味もありますが、酸味を感じるような味わい。

お野菜が彩り良く沢山使われていて、

全体的に少し塩が強く感じましたが、
食べ疲れることなく美味しくいただぎました。
