ティーペアリングのコースとは珍しい！
ワインのペアリングできるほど強くないし、紅茶好きなので、とても良かったです。
オープンキッチンでテキパキと料理が出来上がっていく様子を観れるのもGOOD。
お料理は、素材の風味が活きつつも足し算された、バランスの良い品々でした。
◯白エビと青豆
濃厚な貝の旨味が効いたクリーミーなスープ、豆の食感に白エビの旨味、紫蘇の花の爽やかさが絶妙なバランス
◯鰆、青海苔のリゾット
皮目の香ばしさ、身のふっくら加減と絶妙なポワレ。アスパラも風味が強くてとても美味しい。
◯子羊のロティ
羊肉なので独特の風味がありますが、山菜が丁度よく臭みを打ち消して、こちらも素晴らしいバランスでした。山菜は行者ニンニク、のびる、こごみ(?)。
ペアリングはキームン、ズシッと濃い味わいで肉料理にとてもマッチ。
