■菜の花と新玉ねぎを使ったクスクスのサラダ仕立て
上にはコウイカ・ホタルイカ・イクラが乗っており
香り漬けにレモンの皮がかかっています。
さっぱりしていて美味しかった！
■八鹿豚のタコス
生地の上にはふきのとうのお味噌と八鹿豚の炭火焼きのローストと豚のタン、島らっきょうのソテー乗っています。
噛むたびに旨みが溢れます！
■初鰹のタタキ風
ガリのようなアクセントのあるカブのピクルス、紫蘇の風味が味わえる花穂紫蘇が乗っています。
■帆立貝のリゾット
養父市の蛇紋岩米というコシヒカリを使用し春の豆類3種類とあおさのりが入ったリゾットにパルメザンチーズのソースがかかっています。
これかなり美味しくて香りも良かったです！
■さわらの炭火焼き
下には泡状の海老のソースと春キャベツのソテー、上にはハナウドという山菜と桜エビが添えられてらいます。
■但馬鴨の炭火焼き
朝倉山椒と柚子を加えた薬味と葡萄のソースでいただきます。
付け合わせは蓮根・ちぢみほうれん草・雁足という山菜です。
■但馬鴨のラーメン
鰹節を効かせた但馬鴨のガラからとった白湯スープ
上には鴨のモモ肉のコンフィが乗っています。
白湯スープが旨みたっぷりで濃厚で最高の〆でした！
■樽出しニューボーン試飲
2026年9月～販売開始予定の新ジャパニーズウイスキー。
熟睡3ヶ月程度の大変珍しい状態で試飲できます！
アルコール度数が高いのに甘さがあり、完成が楽しみなウイスキーでした！！

私はいつもノンアルなので、憧れのペアリングが経験できてすごく嬉しかったです✨
ウイスキーを製造しており、樽出しニューボーン試飲もコースに含まれていました！
2026年9月～販売開始予定の新ジャパニーズウイスキー熟成3〜4ヶ月程度の大変珍しいもので、普段お酒飲まないのですがせっかくなので私も少しいただきました☺️
お料理も季節感を感じながら見た目・香り・味の五感で楽しめる素晴らしい内容でした
