大阪メトロ日本橋駅二番出口を出てすぐ北隣。すこし妖しげな雑居ビルにあります。エレベーターで三階で降りると、飲茶のお店の入口前のスペースから中国風。雑居ビルの雰囲気もあわせて香港感がすごい。
入口を入ってすぐ右手で目につくのが、ジャッキーチェンの絵画。ユンピョウら三人で飲茶を食べています。テーブルもすべて螺鈿細工の綺麗な黒。奥には円卓もあって大勢で料理を味わえるようになっています。
料理長は香港で３０年間厨房に入っていた本格的な広東料理人。人懐こくて話上手なオーナーは、料理長の妹さんで、味とコスパのよさから常連客も多く、コロナ前は予約なしでは入れなかったお店です。
飲茶の食べ放題コースは二人からなので、単身、通って、オーナーお勧めの広東料理を味わいました。
日本で街なかの中華料理屋さんにいっても、円卓付の個室のある高級中華料理店にいっても、麻婆豆腐（四川料理）や青椒肉絲、北京ダック（北京料理）を除いて、広東料理がメニューの大半を占めているほど馴染みのある料理ですが、広東料理は、もともと広東省内各地の名物料理で、広州料理、順徳料理、東江料理（客家料理）、潮州料理の四大料理の集大成です。
中国でも、食の中心地は広州で「食は広州にあり」という言葉があるほどですが、広州のレストランで傑出した料理人は、実は順徳出身の者が多く、他の地方の料理と融合し、改良を加えながらこれらの料理ができました。
広東語の飲茶（ヤムチャ）やワンタンが、英語や日本語で外来語として普通に使われていますが、これは中華料理の中では最も世界中に広まっているのは、清代以降に合衆国、ハワイ、東南アジア各地などに多数移住した中国人が広東省出身者だったためです。日本でも横浜中華街や神戸南京町には、広東系の華人が多く、沢山の広東料理店があります。
潮州料理から取り入れられたフカヒレや燕の巣を始め、貝柱、カキ、ヒラメの干物など、海産の乾物のうま味をとりいれ、総じて薄味で、素材のうま味を生かす料理が多いのが特徴で、調味料は、砂糖、塩、コショウ、醤油、米の醸造酒とスープが基本で、これにショウガとネギで風味を加え、油や水溶き片栗粉で照りを加えられます。食材に合わせて、オイスターソース、XO醤、魚醤、蝦醤、酢、ニンニク、腐乳、八角、豆豉なども用いられますが、ほとんど、御馴染みの調味料ですね。
最近、中華料理屋さん巡りをして気づいたのですが、日本人の経営するお店は看板に「中華料理」と、中国人のお店には「中国料理」と書かれていることに気づきました。偶然かもしれませんが、ひょっとして、日本人向けの味付けに中国料理を、われわれが日本語で中華料理と呼んでいるのかもしれませんね。頂いた料理を動画に編集しましたので、よかったらご覧下さい。
