鍋を食べに行こう→肉系が良いな→鴨はどう?――ってなわけで、鴨鍋を食べようと此方のお店を予約しました。
通されたのは2階座敷。入り口が1階店舗とは異なっていて案内がないと判らないですww
鴨鍋は予約のときに注文済みなので、鍋の準備が出来るまで、酒の肴にと串焼きと生ハムをお願いしました。
飲み物は先ずはビール。その後、地酒にシフトwww
突き出しは豆腐のような寒天のような小鉢です。甘めで、ぺろっと食べられます。
突き出しが無くなった頃、串焼きと生ハムが出来てきました。
串焼きは鴨ネギとこころ。
鴨ネギは如何見てもネギ間。火が通って甘みがが出た東京ネギが鴨肉に合います。
こころは、鶏肉よりふっくらした見た目。で、鶏肉のようなコリコリ感が無くて柔らかい。肉厚だから噛み応えはあります。
変なくせもなくて食べやすい。
味付けは2本とも、やや塩分控えめくらいです。だから鴨肉がより味わえる。肉に自信がないと出来ませんよね。
生ハムは日本酒のあて的な味。添えられた生玉ねぎスライスと一緒だとさっぱりとした味わいです。
難を申すと、添付のレモン絞り器の使い勝手が悪かったorz 自分らが不器用だったのか??
そして、真打。鴨鍋。
肉はロースともう一つ(部位をど忘れしてしまった)
鴨肉と別の皿には野菜(椎茸や白菜、水菜、シメジ)と薄揚げ、豆腐がたっぷり。
鴨肉の分厚くカットしている方をよく煮て出汁をだして、ロースはしゃぶしゃぶくらいで…と説明があったので、(多分)その通りに炊く。
で、取り皿によそって食べる。
鴨美味い!!結構しっかり炊いたのに柔らかい!
甘みのある出汁は鴨にも野菜にも合う。薄揚げにも滲みて美味しいv
地酒が進むわー(*´▽`*)
因みに。しゃぶしゃぶでと云われたロースですが、うっかり煮込み過ぎても硬くならずに美味しく頂けました。
〆があることを失念していて、鴨肉の炒飯を追加。
これは塩味が濃いめで、油がよく絡んでぱらぱらっとしています。
そして、〆の蕎麦。流石、鴨には蕎麦。鴨肉から出た出汁が蕎麦に旨味を加えています。
散々飲み食いした後なので、腹が飽和状態で同行してくれた相手に殆ど食べてもらうという体たらくorz
日本酒に合う料理なので、地酒の種類がもっとあれば嬉しいかも。
