We purchase the Omi beef we serve in whole cows. Our greatest strength is being able to serve A5 class Kuroge Wagyu beef at a very fresh level. Omi beef, raised in the fertile soil of Lake Biwa, has a finely textured and smooth meat, sweet, light fat, and a mellow aroma. For this reason, we serve it without sauce, as a rule. Because we purchase the whole cow, we can serve fresh horumon without any unpleasant odor, and it can be eaten with just salt.
