実際驚いた。
こんな喫茶店みたいな店内で、コスパの優れた ビストロ ランチ食べれるとは。
隠れ屋的とは、店内を指すわけでなくむしろ、シェフの実力を指すと考えるべきである。
それが、正当なる評価である。
場所は谷町６丁目。
空堀商店街を南下し、オリ―ブドラック越えたところで、小道を左まがるとすぐある同店舗。
店内は正直、喫茶店の雰囲気に近い。
しかし、シェフの実力は確かなものだ。
おそらく、クラシックスタイルのフレンチなら、いとも、簡単に作れるのではあるまいか。
ビストロなどと、謙虚なこといってるが、その技術ないし素材を見抜く力量は、確かなものだ。
８００円のお肉ランチいただいた。（その他同額で、魚のランチ -１００円でオムライスもある）
驚愕のコスパである。
かぼちゃのクリームス―プ＋牛三角ばら肉西洋わさびソ―ス+ごはんの内容である。
家で作るのが、実際馬鹿らしくなった。
この内容のものを自宅で、作ろうとおもえば、おそらくこの値段では、無理だとおもえる。
それほどの内容＊充実度である。
クラシックフレンチファンには、堪らない一軒ではあるまいか。
***かぼちゃクリームス―プ***
滑らかなクリームのあじわいにタチノボルかぼちゃの味わいに、ヴィヨンの旨み。さくっとしたクルトンもその旨みを吸い込む。デリケ－トな余韻が広がり拡散する。クラシック的な美味さを堪能した。
***牛三角バラ肉グリエ 西洋わさびソ―ス***
いい牛肉の品質＊鮮度にボリゥ―ム感もあり、キュイソンがみごとのひとこと。全面ロゼ色でありながら、生ではなく、きっちり、火が通っている。柔らかい牛肉は、弾力ありながら、かみ締めるほど甘味*旨み*に溢れ西洋山葵入りバタ―と蕩け、山葵の風味にあふれる。醤油系のソ―スも軽妙にその肉の味に馴染む。付け合せの大根もあっさりしながらも、月桂樹の風味が、美味く広がる。シュ クル―トも実にココチイイ酸味がかみしめるほどひろがる。シンプルでありながら、主役を引き立てる脇役の存在を上手く意識するほどの配置の妙。この価格帯では、信じがたい圧倒的な牛肉の存在感である。
実にクラシックファンには、たまらない内容だ。
喝采のごとき時間が過ぎるその愉悦が、堪らない。
