カルボナーラかボロネーゼのほぼ二択という挑戦的なコンセプトで、メニューの添え書きも自信のある書きぶりです。初訪問はボロネーゼのサラダセットをいただきました。セットの最初、カップ入りのポタージュは寒い季節にはありがたいものです。空きっ腹を内側から優しく温めてくれます。滑らかでクリーミーなホッとする味。次に供された彩りサラダは本当に鮮やかな盛り付け。紅芯大根、水菜、レタス、ミニトマト、パプリカに、ドレッシングはにんじんすりおろしかな、そこそこオイリーでリッチな感じで、メインに向けお腹の準備は整いました。
さて、メインのボロネーゼ。ゴロゴロ塊が入ったお肉は、国産牛のスネ、バラ、ネックだそうです。食べ応え十分。旨みがあって牛の繊維質が歯触りよく、上質なシチューのようです。またソースそのものですが、よくあるミートソースがオレガノを入れてイタリアンな感じを出すのと比べ、こちらのソースはそういったスパイス感は薄く、ワインの香りと旨みが効いています。ミンチ肉ではないためか牛脂の脂っこさもなく最後まで飽きがきません。自宅でこのレシピに近づけるのは至難の業かもしれません。麺はタリアテッレの平麺で、ソースともいい相性ですね。トッピングの温玉やパルミジャーノレッジャーノの追いチーズも、試す価値がありそうです。もちろんもう一つのメニュー、カルボナーラもですね。ご馳走様でした。
