とにかく美味しい焼鳥屋があるということで訪問しました。
場所は東大阪市の近畿大学のちょっと南にいったところ。大阪にきたので訪れました。
駅から遠い幹線道路沿いです。
店内は思ったより広くテーブルがメインで40席ほど、カウンターが６席ありました。
ファミリー層が多く、入りやすい雰囲気。値段も良心的な感じ。
最近は個人店でもタッチパネルでのオーダーシステムが
増えていますがこちらもそのようです。今の時代これはこれで良いと思います。
さて、まずは最近焼鳥屋さんでもよくみかけるようになったよだれどり
本格的な中華ででてくるようなレベルでした。
ちゃんと花椒も入っている本格的なピリッと甘辛いタレ。しっとりと仕上げられた胸肉。旨い。ちゃんと仕事されてます。
続いて、人気No.1らしい炙りネギ塩レバー
火は通っているが、パサパサ感などまったくなく、なめらかな食感に濃厚な味わい。
鮮度も良いと思うが、火入れ加減が絶妙に上手いのだと思う。
どっさりとのったネギにゴマ油で仕上げられた塩だれが見事に調和する。
こころ
大振りのハツ。どちらも強火でサッと焼かれたミディアムレアと感じられた。臭みなど皆無で大変美味しかった。ハツって好きなんです。
きも
先程の炙りネギ塩レバーで期待はしていたが、全く期待を裏切らない。むしろ上をいったかも。タレが王道の醤油ベースのタレなのですが、これは他店もお手本にしてほしいぐらいのタレ
焼き加減がやっぱり上手
ねぎま
もも肉が驚くほどふっくらしていて柔らかい。こんなに柔らかい焼鳥を体験したことがなかった。感動レベル。
み
もも肉。やはり柔らかく、ふっくらとしている。ここほどふっくらとした鶏肉は初めてなので、やはり焼き手の腕が良いのだろう
つくね
おだんごタイプ。見た感じ一旦ボイルしているのだと思う。ボイルすると肉汁が逃げてしまうからと某有名焼鳥店のオーナーに聞いた事があるのがここのつくねは全く肉汁が抜けていない。
なんこつ
やげんではなく、珍しく膝なんこつ。
口に入れた瞬間にファッと炭燻香という表現がぴったりの香りが広がった
かわ、ぼんじり、ずり
なんこつと同じく、炭の香りが最高のスパイスとなっていて大変レベルの高い焼鳥
フレンチ寄りのレバーパテ等の小洒落た料理があるわけでもなく、なんの技術もいらない鳥刺しでごまかすわけでもない。
焼鳥は完全に東京の一流店レベルの焼鳥です。
それがこんなにリーズナブルでお気軽に楽しめる。
