大宮駅西口より徒歩10分。
さいたま市大宮区桜木町にあります「いしまる」さんへ約2年ぶりの訪問です。
現店舗のビルが老朽化の為に
近々立ち退きになるため今の店舗では最後の訪問となります。
元々は人気立ち飲みの居酒屋として営業されていましたが、2020年8月にリニューアルオープンして鮨店「いしまる」さん。
店主沼里（ぬまり）親方は独学で鮨を学ばれ方で食べログ寿司百名店にも選出され、今や埼玉を代表する人気鮨店です。
店内は白を基調としたストレートカウンター8席のみでランチは16,500円、ディナーは25,300円のおまかせコース一本のみ。
舎利は米酢ベースにほんのり赤酢を効かせて
酸味と塩気も穏やかで優しい口当たり。
そして白身系、コハダ、脂ののったタネとも万能にマッチして独学とは思えない握りの美しさと一体感に惚れ惚れします。
そして何よりもフジタ水産さんのマグロも味わうこともでき、おまかせコース2万円台とは思えない都内の高級鮨店とも引けを取らない素晴らしいネタのラインナップに満足です。
次回は移転後にお邪魔したいと思います！
