I had been interested in this Sushi in Omiya for a while. I was originally looking forward to enjoying sake at Izakaya (Japanese-style bar). The exterior is retro and the stairs are steep, but the interior is bright and stylish. The chef said he was not very good at talking, but his style and spirit were great, and he taught me a lot about sake while I ate Sushi. I love Oyster and I was just craving them, so I was excited when they appeared first. I ate with Hidaka Mi, who was paired with the chef. When I told him I like sake, he let me taste the butterbur miso that he had just made that day. A snack that I could drink forever. I was looking forward to the nigiri. The rice was a good size and you could feel the grains of rice, and it felt like it was coming apart in your mouth in all directions. The most memorable topping was the whitebait. It was steamed whitebait flavored with cherry blossom leaves in the traditional Edomae Sushi style. It was a nice accent and I personally really liked this morsel. The medium fatty tuna melted in my mouth. The seasonal kasugo also had a good texture. The miso soup was neither too salty nor too rich, and had a good taste. I also ordered blue yakitori and rosy seabass. They also serve sardines, sea urchin, and shrimp. I was allowed to try a bite of the freshly caught sardine. The rosy seabass I ate last was the best morsel for me. It had a soft and firm texture and just the right amount of sweetness. The bill was about 21,000 yen, and it was a very satisfying Sushi.
