卵黄はエスプーマ仕立てにしてあり
お肉を絡めるととてもマイルド。卵黄そのものと違って
エスプーマが非常にきめ細かい泡状なのでまんべんなく
お肉を包み込み、肉の旨味をひきだしてくれます。

ソムリエの方のセンスの良さがうかがえました。

気がつけば満席。
地元の方にも愛されているのがわかります。
また立ち寄りたいお店のひとつとなりました。
