We operate on the second floor of Lawson, next to the rotary of Honkawagoe Station on the Seibu Shinjuku Line. Their signature dish is Fukaya Wagyu beef, so I visited with great interest. According to him, Fukaya Wagyu beef is made from Kuroge Wagyu beef offspring born to parents with good meat quality, which are fattened by selected members within the city. Fukaya beef has a fine texture, good marbling, and a good flavor. My expectations are high. On that day, I decided to just reserve a seat and ask the staff about the selection. Since he is old, I asked him if he would like something more delicious than a big portion, and he said, ``I recommend that because they have rare parts.'' I asked Kamenoko, Zabuton, and Misuji to leave it to me. Serve while roasting carefully to avoid overcooking. Kamenoko is lean meat with little fat. The meat is extremely fine-grained, with fine white marbling, and has a wild chewy texture. You can feel the strong flavor of the meat. Zabuton is a cut of meat next to rib roast, and it has a very beautiful marbling. It is characterized by its melt-in-the-mouth flavor. Misuji is a rare and valuable part of the arm meat. The meat is characteristically soft and marbled. It was fully equipped with sauce and various seasonings, but I wanted to enjoy the flavor of the meat, so I ate it with salt and wasabi. I ordered sunchu as a side dish, but sunny lettuce came out. Well, maybe it's charm. The other namul dish is made of shredded radish, green vegetables, bean sprouts, and zenmai. For additional meat, I ordered Koedo Kurobuta pork shoulder loin, Fukaya beef short ribs, and Fukaya beef loin (not pictured). First, we had draft beer, and then we had a Hakushu highball to accompany the meat.
