注文した客の目の前で手ごねし、提供される蕎麦。
打ちたて、茹でたての出来立て蕎麦がいただけるお店です。
蕎麦を注文した各テーブルにご主人がこね鉢と共に訪れ、粉の状態から水まわし、蕎麦をこねていく。
その間のご主人との会話は蕎麦の味を引き立てるエッセンスであり、おもてなしの心を感じる時間でもあります。
蕎麦他の単品もありますが、コースの設定もあり。
サラダ、前菜、お造り、天ぷら、煮物、寿司、土鍋ごはん、デザートまで、量が多過ぎる印象ではありますが、想像以上の高いクオリティ。
特に江戸前鮨のシャリは砂糖不使用、赤酢を使用。
ネタは天然本マグロ、赤貝、クエ、きんめ、アラなど、寿司屋顔負けのネタ。
それを天城産本わさびでいただく本格鮨です。
素材にこだわり、枠に捕らわれない独自のスタイルを貫いているのは素晴らしい。
