滋賀県のご当地ラーメンを目指し発案された「湖国ブラック」は、現在、県内の数店舗で提供されています。
▪️湖国ブラックの定義
・県内産のたまり醤油を使うこと
・清湯スープであること
・背脂を入れること
・中太縮れ麺を使うこと
・数量限定でもいいから毎日提供出来ること
・長く続けられること
・大き目の巻きバラ肉を使うこと
・麸を使うこと
これらを満たすラーメンは自由に「湖国ブラック」を名乗って良いとされています。
この代表店でもあり、湖国ブラック発売前から人気店でもあるととち丸さんに久々の訪問。大通りではなく住宅街にポツンとあります。
頼んだのは、湖国ブラックとこってり塩で、後者は焼飯セットBに。
すべてが高いレベルでおいしかったです(((o(*ﾟ▽ﾟ*)o)))その中でも特に湖国ブラックは絶品で、見た目ほど濃過ぎることなく、コクと深みを感じるスープで麺との相性もバッチリでした。
